Eating Oatmeal Chocolate Fudge Bars is basically as close to heaven on earth as you can get. These have always, and will always, be one of my all-time favorite treats!
My mom didn’t make these growing up, but as a foodie from birth, I was well trained (self-taught) to sniff out these bars at any pot-luck event I ever attended.
Thankfully they were a popular bar cookie back in the 90’s so I was lucky enough to find most of the time!

I love the fudge center in these bars so much I created a Peanut Butter Bar with the same center and they are fantastic too!
The buttery oatmeal cookie with a thick, creamy, chewy chocolate center is a perfect combination and has a texture that leaves you wanting just one more bite.

You can use milk or semi-sweet chocolate chips. I usually use milk chocolate chips because my kids like them better that way, but they are delicious with either!
The only thing that is a little bit of a pain with this recipe is spreading the oatmeal mixture on the bottom of the pan. You only use 2/3 of the mixture on the bottom of the pan and it can be tricky to get it evenly distributed. I usually use my hands or put my and in a plastic bag if I don’t want to get sticky.
Don’t let that deter you from making these delicious bars. Believe me, the little bit of extra work is worth it.
Also, I just had to share this note because it cracked me up! My kids took some to school to give their teachers and Charlotte’s teacher sent this not back with her.
